Crispy Baked Zucchini with Parmesan

I have yet to meet anyone who does not like this yummy baked zucchini – kids included. It is so simple to make and can be used hot or cold.

Steps

Cut zucchini into 1 cm thick disks 

Coat with olive oil, salt, pepper, chilli flakes and garlic

Lay the zucchini out in single layer on baking paper in a pan and sprinkle with 1/4 teaspoon of finely grated parmesan

Bake until crispy golden and tender. 200°C for 20 minutes.

Serve with fresh torn basil leaves if you have some on hand
