By far the most popular of the Brussels Sprouts varieties, the Long Island Improved is an heirloom variety that produces delicious miniature-like cabbage heads. This variety has been around as far back as the 15th century. The first written reference date is 1587, when they were popular in the southern Netherlands. A single stalk of this variety can bear 50-100 dark-green Brussels sprouts. They are compact plants producing sturdy spikes that mature from the bottom up. Their flavour is improved by slight frosts and they will take on a sweeter tone.
After harvesting, to help maintain moisture and freshness, place them in your vegetable crisper in the refrigerator and keep them on the stalks until you’re ready to use them. Brussels sprouts are believed to have potent, anticancer properties. They are also an excellent source of protein, vitamin C and vitamin K.
